Recipe: Chicken and Vegetable Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup spinach leaves
  • 1 cup cooked quinoa 

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened.
  • Stir in garlic and cook for another minute.
  • Pour in chicken broth and bring to a boil.
  • Add shredded chicken, thyme, parsley, salt, and pepper. Reduce heat and simmer for 15 minutes.
  • Stir in spinach leaves and cooked quinoa or rice, cooking until spinach is wilted.
