Recipe: quinoa - avocado - tomato salad w/ lime vinaigrette
Ingredients
1 CUP QUINOA
2 CUPS VEGETABLE BROTH
1 AVOCADO, SLICED
1 CUP CHERRY TOMATOES, HALVED
1/2 CUP BLACK BEANS, DRAINED AND RINSED
1/4 CUP RED ONION, FINELY CHOPPED
1/4 CUP CILANTRO, CHOPPED
1LIME, JUICED
1/2 TEASPOON AGAVE
1/4 TEASPOON CRUSHED RED CHILI FLAKES
2 TABLESPOONS OLIVE OIL
SALT AND PEPPER TO TASTE
1/4 CUP CRUMBLED FETA CHEESE (OPTIONAL)
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, avocado, cherry tomatoes, black beans, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, agave, olive oil, salt, pepper, chili flakes. Pour the dressing over the quinoa mixture and toss to combine.
- Sprinkle with crumbled feta cheese.
- Serve immediately or refrigerate for later.

I love the trend of presenting classic food in a non traditional way.. like the savory cupcake, corn ribs, and the watermelon sandwich. It reminds me of a remix.. same key elements we love but with a fresh sound. Great post.
Precisely, and this is why we love hip-hop. There are countless examples of creative people making phenomenal works of art out of unconventional unintended sources. Both food and music have been catalyst for and the benefactors of such “remixes”.
