  • Add the egg, molasses, and vanilla extract to the butter mixture, beating until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be soft.
  • Cover the dough with plastic wrap and refrigerate for at least 1 hour, or until firm.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  • Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Be careful not to overbake to maintain chewiness.
