Recipe: Herb-Roasted Chicken with Vegetables

Ingredients

1 whole chicken (about 4-5 lbs)

1/4 cup olive oil

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

4 cloves garlic, minced

1 lemon, halved

Salt and pepper to taste

4 carrots, peeled and cut into chunks

4 potatoes, cut into chunks

1 onion, quartered

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
  • Pat the chicken dry with paper towels. Rub the herb mixture all over the chicken, including under the skin.
  • Squeeze the juice of half a lemon over the chicken and place the lemon halves inside the cavity.
  • Arrange the carrots, potatoes, and onion in a roasting pan. Drizzle with olive oil and season with salt and pepper.
  • Place the chicken on top of the vegetables in the roasting pan.
  • Roast in the preheated oven for about 1.5 hours, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables.
