Ingredients
1 head cauliflower, cut into florets
2 tablespoons olive oil
1/4 teaspoon chipotle powder
1 teaspoon chili powder
1 teaspoon smoked paprika
Salt and pepper to taste
8 small corn tortillas
Avocado Crema:
1 ripe avocado
1/4 cup Greek yogurt or vegan yogurt1 tablespoon lime juice
Salt to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss cauliflower florets with olive oil, chili powder, smoked paprika, chipotle powder, salt, and pepper.
- Spread the cauliflower on the prepared baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
- For the avocado crema, blend avocado, Greek yogurt, lime juice, and salt in a food processor until smooth.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- To assemble the tacos, place roasted cauliflower on each tortilla and top with avocado crema.
- Serve with lime wedges on the side.
